Coffee Break with Katie: Semi-Homemade Recipes - Salsa
I like semi-homemade. In fact, my Aunt Susan got me this awesome cook book for my bridal shower and it has the BEST semi-homemade recipes in it. But this is a recipe that both my hubby and I really love. It saves us a BUNDLE on buying prepackaged salsa all the time. In fact, we shop at Aldi's and all these ingredients cost less than $2.00!!!!
I make a very large batch and then can and seal it for later enjoyment. This recipe can be tailored to your tastes and your needs.
2 cans diced tomatoes
1 cans rotel
1 tsp lime juice
1 tsp white vinegar
2 tbs cilantro
1 clove freshly minced garlic
+salt to taste
(For hotter salsa add an extra can of rotel OR add chili pepper OR tabasco sauce)
Now comes the easy part. Take ALL the ingredients and throw them together in a blender. Blend quickly...do not completely mince the ingredients or you will have salsa soup! Chill and allow to sit overnight to allow all ingredients to combine. Serve the next day with tortilla chips. It's that easy! This recipe serves approximately 8 people.

I love your semi homemade recipe. I never heard of Rotel. What exactly is it? I hope I can buy it here because I want to make this dip for our Super Bowl get-together.
Oh, by the way, if you like crab you would love this dip.

Sandy - Rotel is a spicy tomato, chiles, and mexican "spice" blend. It's in different places at different groceries. You can usually find it with the canned tomatoes...or try the Mexican section.
